Nutrition Services Overview

The department is comprised of both Clinical and Dietary Nutrition Services. Department team members include the chief of patient care, clinical dietitians, clinical dietitian specialists, a certified dietary manager, therapeutic cooks, food service personnel, and the beloved volunteers of MCDH. Our whole department is focused on patients directly to promote individualized medical nutrition therapy in a multidisciplinary approach as a means to optimized patient care. The department falls under the guidance of MCDH’s Chief of Patient Care, Emmet O’Connell.

Clinical Nutrition Services offers comprehensive nutritional assessments, intervention and education to patients and families, and additionally provides nutrition education for staff members. The clinical dietitians at MCDH have advanced education in areas such as public health, diabetes, and plant based menu planning. Additionally, MCDH has a growing outpatient nutrition program that specializes in diabetes education; a physician referral is necessary for an appointment.

The Assistant Nutrition Services Manager (ANSM) is Lois Senger, MS, RD, CDE. She performs clinical inpatient and outpatient consults, and other departmental duties in collaboration with the NSM and NC/CDM. Lois has a long history of more than 30 years as a registered dietitian consulting with outpatients and inpatients; she is a Certified Diabetes Educator and also a renal specialist who works with dialysis patients. Dietary Services offer nutritious, attractive, and delicious therapeutic patient meals compliant with the patient’s diet prescription and CMS guidelines.

The Nutrition Coordinator (NC) is Shonda Sanders, CDM. Ms. Sanders supervises the kitchen team and works collaboratively with the dietitians to ensure a survey ready kitchen at all times. Ms. Sanders was previously a chef here at MCDH for over eight years, and additionally has worked all aspects of all other kitchen job duties; she carries a wealth of knowledge through her years here including experiencing multiple survey experiences. Shonda is working diligently to continuously develop and train our cooks, and other food service personnel with patient care and healing as our focus, ensuring the highest standards are being met and delicious meals being provided for our patients. Food & Nutrition Services (FANS) Department Overview

The Food and Nutrition Services Department is comprised of both Clinical and Dietary Nutrition Services. Department team members include the Chief of Patient Care, clinical dietitians, clinical dietitian specialists, a certified dietary manager, therapeutic cooks, food service personnel, and the beloved MCDH volunteers. The entire department is focused on patients directly and promotes individualized medical nutrition therapy using a multidisciplinary approach as a means to optimize the patient care experience, and the role therapeutic diet plays in a patient’s well being and recovery plan. The department falls under the guidance of MCDH’s Chief of Patient Care, Terry Ann Murphy, RN, MHSA.

The Nutrition Services Manager (NSM) is Heidi Hope Faivre, MPH, RDN, RYT: Heidi has over 15 years of experience as a clinical registered dietitian/nutritionist (RDN), and educator; she is a holistic plant based RDN focused on patient care. Heidi is on a continuous mission to constantly improve MCDH’s Nutrition Services Department to provide the most evidence based clinical practices for our patients, while also encouraging improvements in therapeutic diets to ensure meals are more nourishing, less processed, and as seasonal, local, and organic as possible. Heidi is a member of the Wellness Committee, the Patient Safety Committee, and also attends Infection and Quality Control meetings regularly. Heidi is a passionate advocate for education, performance improvement, personal empowerment, social responsibility, sustainable culinary arts, and positive relations.
